On TV shows they have interns to clean up after the chef. Do you have an intern? If the answer is "No" then you are probably the person who has to wash all those tiny dishes... so if you don't mind doing dishes, go ahead and pre-measure into all the tiny little bowls... but if you'd rather measure as you go, that's fine! I advise you to have at least two sets of measuring spoons & cups on-hand so you can keep one set DRY at all times, which cuts down on the washing & cleaning while the recipe is made.
